Mucha Zhinan is the most famous Tieguanyin producer in Taiwan, where "Tieguanyin Oolong Tea" is made from Tieguanyin tea tree following the ancient method. In addition to the aroma of roasted fire, it also has a slight fruit acidity, which is a ripe fruit flavor that stimulates the salivary glands and quenches thirst.
The only way to be called "Tieguanyin Oolong Tea" is to use Tieguanyin tea tree species and follow the ancient tea making process. If the tea is made from other tea tree species through the same process, it can only be commonly called "Tieguanyin Tea".
Tieguanyin, which places great importance on roasting, requires repeated roasting to develop its unique flavor. The tea is fermented and roasted for the second time using the traditional method of cloth wrapping and kneading, from the kneading stage through more than 20 roasting stages to determine the temperature and time of the next roasting by the aroma.
